How can I have subtitles be optional in the converted files?

I'm trying to convert a foreign language DVD. In the resulting files I want to have subtitles embedded, so I can optionally switch them on in case I don't understand what's been said.

But no matter which output format I choose, subtitles are always displayed when played by a media player. I don't seem to be able to disable the subtitles. They seem to have been rendered into the file's video stream.

What settings do I need to select for having subtitles embedded in the resulting file, yet hidden until I enable them in the media player?
