ok, I figured out how to copy/ burn, no problem. But the data transfer shows up on the new DVD broken up into individual chapters and will not play. Is there a step I missed or another program I must now run the date through to get it to play from the copy?

A DVD is comprised of many files and not a single large one. You should be able to play it by opening the VIDEO_TS.IFO file with your media player software or telling it to play a DVD form the hard drive and pointing the media player to the directory of the ripped DVD.

This really doesn't have to do with AnyDVD, though.
