Tried searching the forums to see if the issue had been brought up by others, but found nothing that matched.

Recently I've only been getting dd-stereo audiotrack on nearly everything I try from Disney+.
Old releases still have the 5.1 audio.

Example: Ahsoka episode 1

I have 5.1 for Ahsoka (all episodes).

edit: Is it perhaps defaulting to stereo and you need to select 5.1?

Hmm, I "figured it out".

The descriptive audio track is highlighted every time, making only those options available, although that track is not checked off, so I have to highlight the non-descriptive audiotrack to get 5.1 to appear.

Can't seem to find anywhere to "disable" that default highlighted track though

Yes, same for me. If descriptive audio is highlighted (not necessarily selected), 5.1 is removed as an option.

English selected and highlighted - 5.1 available

English selected but descriptive highlighted - 5.1 not available

I get descriptive audio listed as the first track in my version (latest).
This seems to have been a change in recent builds though, as I didn't have this "issue" before.

You have to look at what you’re downloading. Plus you have to highlight it just as JCH.H has
