Generally yes. Our online manual is made with Sphinx and therefore we should be able to export any content to pdf. Will work on it, but I might need some time...

Is it not possible to just update the manual included in AnyDVDs installation folder?

Both CloneCD and CloneDVD mobile already have detailed manuals.
In comparison, AnyDVDs manual is currently somewhat lacking (just 1 html page).

that's probably the idea at some point. Perhaps they're waiting for it to be translated so they can bundle them all in 1 file.
